| El Salvador has ideal microclimates for specialty coffee production.
El Salvador produces Arabica species only. The main varieties found are Bourbon (which accounts for 80%), Pacas (15%), and other varieties such as Caturra, Catuai and Catistic.
The harvesting period in El Salvador starts in October for the low lying areas (1,500-3,000 ft a.s.l.), and extends into March for the high altitude coffees (4,000 and 5,000 ft.a.s.l.).
There are aproximately 170,000 hectares planted in coffee.
The production is distributed among 18,000 coffee producers. Small and medium size farms of less than 50 hectares account 96% of the production. The provinces in which the coffee is grown are: Santa Ana, Ahuachapan, Sonsonate, La Libertad in the western central region. San Miguel,Usulutan and Cutuco in the eastern part of the country.
